"Winning this award is a real tribute and a tangible recognition that the team has achieved its aims, and that the dishes developed by Clive D'Angelo-Smith, Head Chef, in conjunction with Matthew Thomas, the General Manager at Ffos Las, have that 'wow' factor and a real a point of difference."
Tim Long, Ffos Las Racecourse's General Manager and Clerk of the Course, said: "As a racecourse, we take great pride in our use of local produce. Our caterer, the Lindley Group, focuses on making the most of the very best of local food and drink, and, of course, they employ local people. At a venue such as ours, food and service must be of the highest quality, and Lindley has delivered this in abundance in the Bridles Restaurant."
Following the success of the first Piper Heidsieck Champagne Catering Awards, the champagne house has already signed up to sponsor the 2011 Awards. It is intended that these become an annual event and consideration is being given to introducing further categories.
Ivor Spreadbury, Managing Director of Merbury Catering Consultants which organised this year's Awards, says: "The Awards have highlighted the levels of achievement in catering that have been accomplished by many racecourses in the UK. The response from all racecourses has been extremely positive and encouraging and we hope that the continuation of the Awards will stimulate the desire to achieve excellence in catering at racecourses."
